Cheddar cheese is a versatile ingredient that can be used in a variety of dishes. It has a sharp, nutty flavour that pairs well with both sweet and savoury foods. Roast veg and Cheddar bake
Roast some chopped carrots, squash, courgette and cherry tomatoes together at 200°C/400°F/gas mark 6 until cooked. Scatter over some grated Cheddar and grill until browned and bubbling.
Seriously good cheese sauce
Melt 2 tbsp butter in a saucepan and then add 2 tbsp flour and cook together. Add 300ml milk and stir together beating out any lumps then cook at a simmer for 2 minutes. Adjust the milk quantity according to the runniness of the sauce you want and then stir in 1-2 handfuls of grated cheddar. Use with everything!
Mix 110g grated Cheddar with 1 tsp English mustard, 1 tbsp soft butter, 1 tbsp of beer and a drop of Tabasco. Spread on pieces of bread which have been toasted on the other side and grill until bubbling.
Sandwich together 2 pieces of bread with 1 piece of ham and 2 pieces of Cheddar. Now either toast the sandwich on both sides or fry it in butter, the cheese should be nicely melted in the middle.
Mix a can of drained tuna with 1 tbsp mayonnaise and 1 finely chopped spring onion and spread it onto pieces of bread which have been toasted on the other side. Top with slices of Cheddar and grill until bubbling.
Cheese and potato gratin
Slice 1 large onion finely, and peel and finely slice 4 large potatoes. Fry the onion until soft then layer it and the potatoes in a gratin dish with plenty of seasoning and 2 tbsp of cheese. Pour over 100ml milk or cream and top with more grated cheese. Bake at 180°C/350°F/gas mark 4 until the potato is tender.
Boil 4 large potatoes, cut them into chunks, drain and then return to the heat with a knob of butter and a little milk for 1 minute. Mash together and then beat in lots of grated cheddar and black pepper until you have a stretchy mash.
Scrambled eggs and cheese
Whisk 2 eggs with a splash of milk and plenty of seasoning. Scramble in a pan and then add a few snipped chives and some grated cheddar, mix briefly and serve on walnut bread.
Fry 1 large sliced onion until browned. Fry 1 steak for each person, then divide the onion between the steaks and make a layer on top of each one. Top each with a few slices of Cheddar and grill until browned.
Cut a block of Cheddar into cubes and put it in a gratin dish. Bake at 200°C/400°F/gas mark 6 until the cheese melts and then serve it with chunks of crusty bread or crudités to dip in.
